Maiken's (as close as I can figure) Potato Salad

1 lb bag small white potatoes
3 sprigs dill
3 sprigs parsley
1 stalk green onion
3 tbsp white wine vinegar
3 tbsp olive oil
2 shakes of salt
2 grinds of pepper

Boil potatoes 'til done. Pour off water. Let cool.
Quarter potatoes. Put back in the pot.
Mince dill, parsley, and onion add to the pot.
Add vinegar and oil.
Mix well, but don't hammer the potatoes too hard.
Let sit in the fridge 'til chilled.
Serve.
Season with salt and or pepper to taste
